Borealis, a glorious Vidal ice wine from Benjamin Bridge, is the sort of wine that makes my toes curl with happiness. Neither cloyingly sweet nor sharply acidic, it’s just right. And when I finally broke into this bottle, it was to serve it at a very special dinner party that I held recently. Along with serving it in the glass, I took a couple of ounces, froze it with a simple syrup and made a refreshing palate cleanser before the main course.
Those in the know about ice wines will no doubt have many different ways and words to describe it–I’m going to go with “yummy”. I’m sophisticated that way.
